Healthy Road Trip

One night while scanning through Netflix, we discovered the movie "Fat, Sick, and Almost Dead".  We enjoyed it so much.  The Australian narrator, on the road to health and weight loss, spends 30 days in New York City and the next 30 traveling the country, talking to people everywhere, all the while "fasting" on juice.  It was fascinating and, since it is post Christmas and weight loss is on our minds, and to top it off one of our friends mentioned she had a juicer she was putting on Craigslist, Max made a deal for the juicer - a Jack LaLanne Power Juicer Deluxe, never used.  It's a handsome machine!

Now, I am not a big fan of fad diets, but I did like the principle behind this one.  Since you are juicing raw vegetables, you are getting the nutrients from way more vegetables than you could possibly sit down and eat.  Thus, instead of having fewer nutrients while you are dieting, you are actually getting more nutrients with fewer calories.  Almost magic!

Although we really couldn't see ourselves doing it 3 meals a day, we decided we would give it a try one meal a day - and that meal would be dinner, because that is where the most temptation usually is.  So, this is our second night of it.  And, I must say the biggest surprise was that the juice actually tastes great and is incredibly filling.

Below is the recipe for one serving of Mean Green Juice:  (I doubled it to make the 2 glasses below.)

6 kale leaves (I used mustard greens one night and turnip greens the next)
4 stalks of celery
1 cucumber
2 green apples
1/2 lemon (peeled but leaving some white on - lemon counteracts the bitterness in the greens)
Piece of fresh ginger (about 1/2 inch slice)]

Above is a picture of tonight's ingredients.
You need to feed it into the juicer in pieces. And the apples pieces tend to pop up and out - very exciting - if you don't have the "stuffer" where it should be.  But, in the end you get about 16 ounces of a very green juice - that is quite tasty.   Bon appetite!

MORE CULINARY TRAVELS

A wonderful change is a tasty Carrot Juice.  The recipe is for one 16 oz. serving (I doubled it):

2 Gala Apples
Jicama (about half an apple size)
2 long (12") Carrots
1/2 peeled Lemon
2 or 3 Bibb Lettuce leaves
2 Mustard Green leaves
1 Small Cucumber
1 Stalk Celery plus the middle part of the Celery bunch
A hunk of Ginger

Enjoy!
